The lovely thing about being a 'curry-head' like me is you can stuff everything together and it ends up tasting like yummy Indian food. I needed to clean out my fridge and what better way than to eat the contents? Waste not, want not, and all that jazz.
Today's Lunch Preparation:
A little safflower oil and ghee thrown in the skillet with a clove of roasted garlic to start.
Spinach -- It was wilting so I salvaged the least wilted bits.
Green Beans -- I salvaged what I could and cut the bits up small. More had to be thrown out than was saved. I figured if I cut up the questionable foods and fried them good I wouldn't poison myself.
(IMPORTANT NOTE: I would never feed questionable bits to other people, but have been known to imbibe them myself.)
Potatoes -- had a handful of fried potatoes left over from last night.
2 sardines -- also leftover from a previous fish dish and cut up small.
I tossed in a can of diced tomatoes and a spoonful of sour cream (used in my biscotti recipe and otherwise ignored in fridge).
Then I lathered on the curry, cayenne, salt, black pepper, and garam masala. When I was sure I had heated everything to the proper temperature, I threw in the rice leftover from Chinese food on Saturday. Cook and remove from heat (sprinkling with ground flaxseed because I've been dumping flaxseed in everything... I need the extra omega-3 for my joint issues.)
Voila! An empty fridge and a full belly, with a bonus of house smelling delicious.
