Saturday, Day 5
BREAKFAST: Fried two eggs in safflower oil, while I was finishing caramelizing some onions to use in later recipes. Took half of the remaining "white & sweet potato mash" from Friday's dinner and then heated it in the egg pan, by pseudo-frying it as well.
SNACK: A green apple covered in almond butter. Okay, so technically that's processed, and it even has honey in it according to the packet, but I draw the line at grinding my own nut butters. The green apples I have are a bit too tart to eat by themselves.
I made myself a small pot of pu-ehr tea. When I look back on the day, I didn't really drink much in the way of fluids. A small pot of tea (24 oz.) and a bottle of water (16 oz). I plan to rectify my fluid intake today. I should be consuming 60 oz. a day.
DINNER: Made a pork and veggie stir-fry over brown rice. Veggies include broccoli, carrot, baby corn, shitake mushroom, and red bell pepper. Made the sauce myself, using sherry, juice of two fresh oranges, (lots of) roasted garlic, (caramelized) onion, cayenne, chicken stock, Chinese five spice, cumin, and soy sauce. Fried in safflower and sesame oil. It was mighty tasty, and I was proud of myself for managing a sauce that didn't have brown sugar as a main component.
DESSERT: Cut up a pineapple and snacked on that. By the time I went to bed, I'd probably eaten half of it. Put the other half away.
Sunday, Day 6
BREAKFAST: Planning the same breakfast as yesterday, two eggs with me finishing off the rest of the white-and-sweet-potato mash. I've also had a cup of coffee with soy milk.
Going to make strawberry-basil agua fresca today, and try to enjoy it even though it won't have all the sugar I like (I usually add enough so that it's about half of what a soda would have in it). Agua fresca is just blended up fruit with water in it. So this will be a pitcher of blended strawberry and basil, with the juice of one lime, and some water. I will allow myself one medium spoon of honey, about a measured tablespoon, since the strawberries are out of season (and therefore more tart than sweet). That and a pot of green tea should help me push liquids for the day.
DIET UPDATE (2100): A friend called me up and asked if I wanted to go to a Spanish restaurant and see some flamenco dancers. Sounded like a reasonable idea, after checking my calendar and ensuring I had a day to recuperate, so I popped the necessary painkiller (I would find I needed a second one, even with the lidocaine patch, with the horror that proved to be the chairs) and muscle relaxer and took a shower and a nap. These are all things required for going out. I had also checked the menu online to make sure there was something that I thought would be both desirable and relatively in keeping with my diet.
Boy, was I in for a surprise....(see next entry for the rest of the update).
DINNER: DIET UPDATE = This will now be tomorrow's dinner. Tonight it's a vegetarian brown rice paella. I'd planned to make tacos, even going so far as to take out a package of ground bison, but I'm not supposed to eat anything that isn't whole grain. I do have masa harina (which is supposedly an automatic whole grain) and I guess I could start soaking some whole wheat flour now, as I'm not that fond of straight corn tortillas. Making tortillas is a PITA, but so is much of my diet. And I'm going to have to locate my homemade "taco spice blend" recipe, so I don't have to use a packet with who-knows-what additional ingredients. Tacos have now gone from one of the simplest things in my house, to something monstrously complex. That said, bison & mushroom tacos, with mixed greens, on homemade tortillas, sounds pretty tasty. And even though taco sauce is probably out, hot sauce is pretty basic as far as "processed foods" goes.
DESSERT: I've still got the other half of the pineapple, should I still be hungry.
